They are rich in B vitamins, as well as vitamin E and vitamin K. They have a high fibre content among fruits - including 75% insoluble and 25% soluble fibre. About 75% of an avocado's calories come from fat, most of which is monounsaturated fat. In general, monounsaturated fats are considered to be relatively healthy compared to polyunsaturated fats. The avocado is very popular in vegetarian cuisine, making an excellent substitute for meats in sandwiches and salads. It is used as the base for the Mexican dip known as guacamole, as well as a filling for several kinds of sushi, including California rolls. Avocado is popular in chicken dishes and as a spread on toast, served with salt and pepper. Store whole, ripe avocados in the refrigerator uncut for two to three days. If cut, sprinkle avocado with lemon or lime juice, or white vinegar, then place it in an air-tight container in your refrigerator and eat within a day or two. Avocado can be frozen for up to two months. To prepare the fruit for freezing, simply remove the skin and pit, and then cut into quarters.
