Description

Avocados are high in potassium (about 60% more than bananas). They are rich in B vitamins, as well as vitamin E and vitamin K. They have a high fibre content among fruits - including 75% insoluble and 25% soluble fibre. About 75% of an avocado's calories come from fat, most of which is monounsaturated fat. In general, monounsaturated fats are considered to be relatively healthy compared to polyunsaturated fats. Store whole, ripe avocados in the refrigerator uncut for two to three days. If cut, sprinkle avocado with lemon or lime juice, or white vinegar, then place it in an air-tight container in your refrigerator and eat within a day or two. Avocado can be frozen for up to two months. To prepare the fruit for freezing, simply remove the skin and pit, and then cut into quarters.
